The basic rule here is to get the oil as far away from the crank as possible, make the pan as large as area allows and put in the minimal amount of oil.

Windage Tray
Most pans do try and strip as much oil as possible off of the crankshaft generally using some type of baffle or series of them. However, making the baffles removable and not attaching them to the crankshaft is more convenient.
